Open it with a text editor. I'm not sure if any will do, but I used Visual Studio for it and it worked fine. Notepad++ should probably work fine too, and a simple notepad too since it's all text. But don't quote me on that

Search for a used NPC level. I used Galileo's in my screenshots, so I'll use him here too. The important part of his level's code should look somewhat like this (the difference would be your highscore): {"Level_Key":"GALILEO","Reward_Type":"","Reward_ID":"","Bonus_Imagination":0,"State_Trigger":"","Scene_Path":"GALILEO","Player_High_Score":3210, [...]

Search for the Scene_Path part, highlighted in this message, and replace the GALILEO part (and not the one from the Level_Key !) into another level (for example HEATHERN if you want Raposa Heather's cut level, or ERIC_TEST for a test level).”
